The curing time, spice mixture, and how to smoke.

The hands down best bacon you’ll ever taste is dry cured bacon. The benefit of a dry cured belly is that the flavors of the finished product are intensified. This happens due to the loss of the natural moisture in the curing process. Once a belly is cured another pleasing flavor profile that is added is smoke. Apple, Hickory, and Alder and to diversify your flavor profile even more, a rub can be applied. Black pepper for a “peppered bacon” garlic, rosemary, and sage for a “herb rubbed bacon” and you could also substitute maple sugar for a maple bacon.
